This past weekend, my mom sent me home with food from our Cambodian New Year celebration—Khmer pickled vegetables and lemongrass grilled pork.
Usually I eat it as is. Basic.
But lately, I’ve been trying to approach things differently.
I made something simple yet just put a new twist on it—a sandwich on a keto bun using what I already had.
And it turned out so good.
The crunch from the pickled vegetables, the flavor from the pork—it reminded me that not everything needs to be planned or perfect to be meaningful.
Sometimes it’s just about using what’s already in front of you.
I think this applies to more than just food.
In life, I’ve noticed how often I overlook what I already have—whether it’s time, resources, or even parts of myself—and think I need something more or something different to move forward.
But maybe it’s not about starting over.
Maybe it’s about being more intentional with what’s already there.
Taking the simple things, the overlooked things, and turning them into something nourishing.
And maybe that’s enough.
