The Soup I Make When I Need Something Comforting

On nights when I need something warm, light, and grounding, this is what I make. I make this soup when I get hungry, but I don’t want anything heavy. It is easy, takes less than ten minutes, and have minimal ingredients. The simplicity means, no stress and no deep thoughts. Just a simple soft flavor that fills the tummy and soul. Flexible as you can use any protein you’d like for this dish. I love the meatballs like the kind at the pho place. I usually freeze them, and if I don’t have that I would buy some frozen mixed seafood, which will easily be able to thaw out once you place in the soup.

Ingredients

  • water
  • 1 bouillon cube
  • 1–2 eggs
  • frozen meatballs or frozen seafood
  • seasonings (salt, pepper, garlic, ginger, sesame oil — whatever you use)

Method

  1. Bring water to a gentle boil and dissolve bouillon.
  2. Add frozen protein and simmer until heated through.
  3. Slowly pour in eggs while stirring gently and breaking the yolk.
  4. Let the egg solidify in the soup, while stirring slowly.
  5. Season to taste and serve warm.

Some meals are about nourishment more than cooking. This is one of them.
